White Diet Starter Recipe
Is your kid averse to any foods with green, orange, red, purple, or anything not the color of bread? For the pickiest eaters, use my “white diet” hidden veggie mix to hide veggies without changing the color or flavor of common kid-favorite foods. My particular picky eater “white-diet” consists of bread, pasta, butter, eggs, turkey meatballs, chicken nuggets and chocolate protein "milkshakes." Not-From-Scratch Baked Goods
Use your favorite baked good recipe or store-bought mix, and replace all of the water or milk and half of the oil or butter with puréed fruit. You can also microwave one or more hidden veggie cubes (page 3 – 5) for 30 seconds each, and mix them into the recipe. Use hidden veggie cubes sparingly to avoid changing the flavor too drastically. To freeze for later: Double or triple the recipe; Place on a flat surface to freeze; Once frozen, transfer to a freezer bag; Re-heat in microwave or toaster oven as needed.

Healthy Chocolate Chip Cookie Notes
Add organic carrot powder, organic spinach powder, organic broccoli powder and/or organic beet powder for added hidden veggies or color for adventurous eaters.
For added protein, add organic hemp seeds for a hidden protein, omegas, iron, magnesium, potassium and more essential vitamins and minerals for a chocolate chip cookie protein bar. These soft, mild tasting seeds are nutrient powerhouses can be mixed into anything from salads to smoothies to secretly healthy ice cream milk shakes.
If you want a lectin-free chocolate chip cookie, replace oat flour with tiger nut flour or almond flour. Since oat flour is very absorbent (picture oats absorbing liquid when making oatmeal), you my need to reduce the liquid in the recipe).
For homemade chocolate chips, combine 4 TBLS melted organic virgin coconut oil, 5 TBLS cacao powder, 4 TBLS sugar-free maple syrup, 1/2 tsp pure vanilla extract, sea salt. Pour and spread evenly in silicone chocolate chip molds, place flat in freezer until chocolate hardens and store in freezer until ready to use.
Healthy Chocolate Chip Cookie Recipe
Ingredients
1 cup oat flour (almond flour or tiger nut flour - see note)
1/4 cup monk fruit allulose brown sugar (or see note)
1/4 cup allulose (see note)
1/2 tsp baking soda
1/4 tsp sea salt
2 TBLS organic virgin coconut oil
2 TBLS dairy free milk
1/4 tsp pure vanilla extract
1/3 cup sugar-free dark chocolate chips (see note for homemade recipe)
Add organic carrot powder, organic spinach powder, organic broccoli powder and/or organic beet powder for added fiber, antioxidants and vitamins for a breakfast cookie or hidden veggie snack.
Optional mix-ins or toppings: hemp seeds (for added protein), cacao powder, stevia-sweetened dark chocolate chips, sugar-free natural sprinkles, shredded coconut, etc.
Directions
Preheat oven to 325 F.
Grease 1 large (or 2 small) stainless steel cookie sheet with organic virgin coconut oil or natural cooking spray.
Alternatively, grease 8” stainless steel baking dish to cut square cookie bars.
Mix all dry ingredients in large bowl.
Mix in coconut oil with hands until flour is crumbly.
Stir in remaining wet ingredients with spoon.
Spoon 12 dollops of dough evenly on 1 - 2 stainless steel baking sheets.
Alternatively, Spread dough evenly in 8” stainless steel baking dish.
Bake 10-11 minutes or when knife comes out clean.
Let cookies cool on stove top and store in air tight container in fridge for 2 weeks.
